LOCATION
The village of Pommard is situated between Volnay to the South and Beaune to the North. Pommard is on a slope, between 240 and 380 meters, facing east or south-east. Pommard can only be red. There is no grand cru wines.
The quite clayey calcareous soil gives Pommard some quite original qualities : a lot of colour, deep red black, intense and pungent bouquet of blackcurrants, musk and game meat.

“An intense, bright, red colour; a powerful nose, with notes of black cherry and spice, evolving towards aromas of young leather. On the palate, the tannins give a certain impression of firmness, somewhat softened by a nice, harmonious texture. Persistent flavors in the aftertaste”.

Winemaking Process : SUSTAINABLE AGRICUTULRE. Manual harvesting with grape sorting and optimisation of choice of date through parcel-by-parcel ripeness monitoring. Traditional fermentation of 15 days in stainless steel tank. NO PUNCHING (PIGEAGE), PUMPING OVER TWICE A DAY UNTIL THE END OF THE FERMENTATION.
Ageing : 12 Months in Burgundy Oak – 30% of new oak
Bottle ageing : 10 to 15 years
