Winemaking Process : ORGANIC AGRICULTURE. Manual harvesting with grape sorting and optimisation of choice of date through parcel-by-parcel ripeness monitoring. Traditional fermentation of 15 days in stainless steel tank. NO PUNCHING (PIGEAGE), PUMPING OVER TWICE A DAY UNTIL THE END OF THE FERMENTATION.
Ageing : 12 Months in Burgundy Oak – 20% of new oak
Bottle ageing : 5 to 8 years
