LOCATION
Gevrey-Chambertin is the most northern of the great communes of the Côte de Nuits. There are 26 Premiers Crus and 8 Grands Crus. Arnaud BAILLOT Gevrey-Chambertin wines are produced from vineyards lying on the extension of the slope on which the premier Cru “fonteny” are situated.

Gevrey-Chambertin is a wine with a beautiful, bright ruby colour. Intensely fruity on the nose, the aromas are reminiscent of black cherry, wild blackberry and liquorice. The woody character is subtle and marries delicately with the other aromas. As the wine evolves, there are more complex notes, such as mild spice, nutmeg and leather. Later still, mushroom and damp earth nuances make their appearance. Although present on the palate, tannin is never astringent but blends itself harmoniously with the natural freshness and velvety texture of the wine”.

Winemaking Process : SUSTAINABLE AGRICUTULRE. Manual harvesting with grape sorting and optimisation of choice of date through parcel-by-parcel ripeness monitoring. Traditional fermentation of 15 days in stainless steel tank. NO PUNCHING (PIGEAGE), PUMPING OVER TWICE A DAY UNTIL THE END OF THE FERMENTATION.
Ageing : 12 Months in Burgundy Oak – 25% of new oak
Bottle ageing : 10 to 15 years
